2018 Aldo Viola Krimiso Catarratto Terre Siciliane Bianco

Krimiso is a skin‐contact white wine produced entirely from 100% Catarratto grapes grown in the Terre Siciliane IGT of Sicily. Named after a local river and its corresponding ancient deity, the wine is crafted by Aldo Viola using traditional, minimal‐intervention techniques. The whole clusters are harvested and placed in stainless steel tanks for an extended maceration period—reported as six to eight months—with occasional pump‐overs. The grapes are not pressed; instead, the wine is drawn directly from the tank without any added sulfur, reflecting a commitment to preserving the vineyard’s natural character and terroir.

Fermentation

Spontaneous fermentation is initiated using indigenous (native) yeasts. The process may involve either destemmed grapes undergoing a 5‐month skin maceration with secondary malolactic fermentation or whole-cluster fermentation extending to 8 months with occasional pump-overs; fermentation is conducted unfiltered and unfined with no additional sulphites.
 

Aging

Following fermentation, aging occurs on fine lees in stainless steel (approximately 5 months), with direct tank bottling and no added sulfur.
