Farming

Harvest

Grapes are hand‐picked and sorted by vine age, with younger vines being 60–85% de‐stemmed and older vines 100% de‐stemmed.
 

Fermentation

Following a low-temperature maceration, ambient yeast fermentation takes place in concrete tanks with foot punch-downs before proceeding to traditional vinification in French oak barrels.
 

Aging

Wines are aged on the lees, with one batch maturing for 11 months and another for 12 months in barrels (10–15% new oak), then blended and further aged for 2 months in tanks—raised en cuve et en fût.
