This wine is produced exclusively from 100% Pinot Noir grapes vinified in white style, meaning the grapes are directly pressed with minimal skin contact. The winemaking process eschews added SO₂, fining, and filtration, allowing the grape’s character and terroir to be expressed authentically. Grapes from warm vintages—including those from 2018 and, in some cases, sourced from 40‐year‐old vines in Polisot (Aube)—undergo fermentation and an extended 11‐month aging period in clay and sandstone amphorae, emphasizing the influence of both vineyard and material on the finished product.
