2019 Bott Frigyes Juhfark Unfiltered

This wine is made from 100% Juhfark grapes cultivated using biodynamic principles on clayey soils over volcanic rock substrate at approximately 250 meters elevation. The winemaking employs the 'Hamburger method' with grapes placed in open tanks for 7 days, alternating layers of foot-pressed bunches, whole bunches, and de-stemmed grapes. Spontaneous fermentation occurs with indigenous yeasts, followed by maturation in Hungarian oak barrels on fine lees, without clarification or filtration. The result is the driest wine in the lineup with pronounced acidity and a tea-like profile. Should be served at cellar temperature rather than chilled.
