2019 Bott Frigyes Juhfark Unfiltered
This Slovakian wine is crafted exclusively from 100% Juhfark grapes grown biodynamically on clayey soils over a volcanic rock substrate at approximately 250 m a.s.l. The estate’s unique terroir contributes to its distinguished character. Following harvest, the grapes undergo a 7‐day maceration in open tanks using the Hamburger method, which alternates layers of bunches pressed with feet, whole bunches, and de-stemmed grapes. Fermentation occurs spontaneously with indigenous yeasts, and the wine matures for 10 months in 500 hl Hungarian oak barrels on its fine lees without any clarification or filtration.

Grapes experience a brief 7-day skin contact with minimal Botrytis exposure.
Fermentation
Native, spontaneous fermentation occurs using indigenous yeasts in open tanks (Hamburger method) under zero temperature control; natural settling and a small amount of SO2 are applied, with a deliberately short skin-contact period.
Aging
Extended lees contact is maintained, with maturation for 8–10 months in Hungarian oak barrels—and, where applicable, in amphora—with no clarification, fining, or filtration.
