2019 Cyril Zangs Brut Cider Calvados

Cyril Zangs, one of Normandy's greatest cider producers, crafts this single vintage cider from orchards around the village of Glos in the Calvados department. Made from 69 varieties of bitter, tart, and bittersweet cider apples, all certified organic. Apples are picked on the tree and aged whole in small wooden crates for up to two months before crushing and pressing. Fermentation begins in stainless steel tanks, then the cider is bottled while fermenting and placed on pupitres for up to a year. Slightly filtered to remove largest particulates, but no yeasting or sulfur added.
