2019 Cyril Zangs Brut Cider Calvados

This single-vintage cider from Normandy’s Calvados region is crafted exclusively from apples sourced in orchards around Glos. The production process reflects a winemaking approach, beginning with fruit picked directly from the tree and aged whole in small wooden crates for up to two months before being crushed and pressed. Fermentation starts in stainless steel tanks, with continued bottle fermentation on pupitres (riddling racks) for as long as one year. Depending on the assemblage, the cider is produced from either a selection of 9 varieties or a complex blend of 69 apple varietals—including bitter, tart, and bittersweet types—from certified organic, dry, and ripe fruit. Minimal intervention is maintained throughout, with no commercial yeasting, and only slight filtering to remove large particulates; no sulfur is added. The product, available in limited batches in 750 ML packaging and sold by the case, underscores a commitment to traditional, terroir-driven techniques.
