2019 Domaine Ganevat Les Chalasses Vieilles Vignes Chardonnay

Les Chalasses Vieilles Vignes is a Chardonnay produced by Domaine Jean-François Ganevat in the Jura region. Grapes are sourced either from the estate’s own vineyards or through négociant arrangements. The wine is crafted from some of the oldest vines in the domaine—planted in 1902 on gray marl soils—which yield exceptionally low quantities, thereby enhancing the terroir’s distinct expression. Each plot is treated with individualized élevage techniques, including hand-destemming with scissors and separate vinification, to fully capture the character of the Rotalier site. Adhering to a minimal interventionist approach, a philosophy rooted in the family’s history since 1650 and currently led by Jean-François Ganevat, the 2019 vintage was bottled in July 2022 and is produced in extremely limited quantities.

Farming

Old vines are cultivated using meticulous biodynamic practices—including methods compliant with Culture biologique et Biodynamique standards and Certified Biodynamic protocols—on complex soils. The management approach allocates one person per hectare across an 8.5‐hectare estate comprising 17 grape varieties.
 

Harvest

Grapes are hand-destemmed and sorted from forty distinct plots, enabling individualized vinification. Fermentation: A minimal intervention, natural process is employed without added sulfur. White varietals ferment either in the same barrels for at least two years or in neutral oak/clay amphoras.
