2019 Overnoy Cotes du Jura Savagnin Ouille
Overnoy is a family estate in the Jura region’s Cotes du Jura that has evolved from a former polyculture farm into an organic vineyard managed on approximately 5.5 acres (with six hectares under organic conversion). The vineyards are planted on red marl soils, and both white and red grape varieties are cultivated—with Chardonnay and Savagnin used for white wines and Trousseau, Pinot Noir, and Poulsard for reds. A signature production is the Savagnin-based white wine made in the ouillé style. Fermentation is initiated with native yeasts and employs a very small dose of sulphur. The wine is aged for three years in old 500‑litre oak barrels that are regularly topped up to minimize headspace, allowing extended contact with fine lees. Bottled unfiltered and unfined, this method reflects both a respect for traditional practices and a modern approach to low‐intervention winemaking.
