2020 A & JF Ganevat La Gravière Cotes du Jura Chardonnay

This wine is a biodynamic Chardonnay 'négoce' produced from old vine plantings, with grapes sourced both from the producer’s own vineyard and negotiated supplies. The Chardonnay vines are grown on distinctive terroirs—including marnes grises du Lias and marnes irisées—typical of Jura, where native varieties are also showcased. Vinification employs minimal sulphur addition and extended lees contact, with some cuvées aged on lees for up to 30 months and others for three years, utilizing natural gassing and deposit processes. Under the guidance of Jean Francois Ganevat, named winemaker of the year in 2018, the domaine crafts a limited portfolio of roughly 40 unique cuvées that emphasize vineyard site, grape variety, and specific vinification techniques while also offering an aromatic and floral white style suited for pairing with poultry and game birds.

Farming

Grapes are cultivated biodynamically with organic practices, featuring minimal sulphur intervention and complete sulphur elimination since 2006. The 13-hectare domaine was certified biodynamic in 2014 and has been a family property since 1650.
 

Harvest

Grapes are hand-destemmed using meticulous vineyard practices with an emphasis on clean fruit and natural, minimal-intervention techniques.
 

Fermentation

White wines are vinified without new oak, with fermentation conducted in neutral oak or clay amphoras.
 

Aging

Wines are aged on lees—white wines for a minimum of two years (with some aged for 30 months) and others up to three years overall—with very low sulphur doses; in certain vintages, sulphur use has been completely eradicated.
