2020 Chateau Yvonne Saumur Blanc

Château Yvonne was founded by monks in the 16th century and resuscitated by Jean-Francois and Yvonne Lamunière 500 years later. Today, Matthieu Vallée farms the estate's 11 hectares organically and biodynamically with a hands-off cellar approach. This 100% Chenin Blanc from Saumur grows in clay and limestone over tuffeau stone soils. Hand-harvested fruit is native yeast fermented in barrels at cool temperatures with natural malolactic fermentation, then aged 12 months in oak (20% new). The wine is bottled unfined and unfiltered with minimal added SO2. A benchmark expression of Loire Chenin Blanc characterized by high acidity and chalky minerality.
