2020 Chiara Condello Romagna Sangiovese Predappio

This wine is produced in Romagna, Italy, exclusively from 100% Sangiovese grapes. The vineyards—located in Predappio and other estate parcels in Emilia-Romagna—are situated at altitudes ranging from 450 to 1,050 feet above sea level and benefit from an array of terroirs, including spungone (a fossil‐rich, calcareous sandstone from the Pliocene), red clay, and limestone soils. Selected parcels, such as the Lucciole vineyard at 750 feet with an east-facing exposure, are used in the best vintages. Vines of approximately 40 years’ age are hand-harvested and destemmed before undergoing fermentation on native yeast in a combination of stainless steel tanks, open-top wooden fermentation vessels, and tonneaux. The wine is then aged in 3.5 hl Slavonian oak botti, a decision that reflects both traditional practices and innovative modern winemaking approaches as exemplified by producers like Chiara Condello.

Fermentation

Grapes are either destemmed or fermented full-cluster, with some batches crushed by foot while others retain whole berries. Fermentation proceeds spontaneously on indigenous/native yeasts in a mix of vessels: temperature-controlled small stainless steel tanks; upright, open-top wooden fermentation tanks; tronconic wood vats/tonneaux; and tonneaux, with maceration lasting 15–25 days when applicable.
 

Aging

The wine is aged either for one year in used 3500L Slavonian oak botti or for 24 months in a 10HL cement tank.
