Gilles Bley crafts this wine in Cahors using Malbec (Côt) grapes sourced from 80‑year‑old vines grown on well-drained red clay and limestone terraces. The grapes are handpicked, de‑stemmed, and gently crushed before undergoing brief maceration and fermentation with wild yeasts in stainless steel tanks.
