Gilles Bley crafts this wine in Cahors using Malbec (Côt) grapes sourced from 80‑year‑old vines grown on well-drained red clay and limestone terraces. The grapes are handpicked, de‑stemmed, and gently crushed before undergoing brief maceration and fermentation with wild yeasts in stainless steel tanks. The wine is then aged for two years in 600‑liter wooden tanks and is produced unfined, unfiltered, and without added SO₂, reflecting a commitment to traditional techniques and the region’s terroir.
