Bourgogne Rouge is a still, dry red wine produced under the Bourgogne appellation in Burgundy, France, primarily from Pinot noir grapes. Its production emphasizes a minimalist and natural style, with some estates—such as Domaine Didon—adhering to biodynamic and sustainable vineyard practices. The winemaking approach is designed to allow the terroir to impart its distinctive nuances, resulting in a wine with light intensity, medium acidity, and lower tannins. Typically intended as an aperitif, it is often served at 16°C to best preserve its clear expression of Burgundian characteristics.

Farming

Farming practices combine conventional methods with biodynamic cultivation. The biodynamic approach follows determined biodynamic techniques and sustainable viticulture, incorporating horse-plowing and manual labor to avoid soil compression.
 

Harvest

Grapes are hand harvested as whole clusters with immediate slow pressing.
 

Fermentation

Spontaneous fermentation is initiated with minimal intervention and no additions. For red wine, a brief 10‐day skin maceration is applied, followed by fermentation in various containers and malolactic fermentation, accompanied by minimal sulfur additions. Finings and filtrations are omitted.
 

Aging

Following racking, aging is executed for 10 months in ovoid vats and 10 months in fibre vats, with an additional one year on lees, and new casks are not used.
