2020 Domaine Olivier Morin Bourgogne Chitry Rouge Constance

100% Pinot Noir from the Yonne, the very northern part of Burgundy far more renowned for Chardonnay. Olivier Morin's vines are older, between 30 and 50 years old, enjoying hillside southern exposure for fruit that is both ripe and balanced. Sustainably farmed and naturally vinified, this wine represents a delicious red Burgundy at a reasonable price point. The wine is a minerally expression in the traditional Bourgogne style, incredibly balanced and fresh with a medium-bodied palate and mineral grip.

Farming

Sustainably and organically farmed since 2020, officially certified organic in 2022. Natural grass cover and herbs planted between rows to prevent erosion. No herbicides used. Organic compost and fertilizer applied. Green harvests practiced. Soil plowed to encourage deep root growth. Vines are 30 to 55 years old. Vineyard size: 3.5 hectares. Soil: Portlandian limestone, clay, and chalky soils. South-southeast exposure at 200m altitude.

Fermentation

Native yeast fermentation in stainless steel tanks; gravity-fed cellar eliminates need for pumps to transfer wine
 

Aging

12-15 months in oak barrels with 10% new oak, mostly older French oak barrels; lightly fined and unfiltered, bottled with little or no filtration; minimal use of sulfur throughout winemaking process
