2020 Ganevat Le Clos Savagnin

This 75 cl white wine from the Jura AOC Côtes du Jura is crafted exclusively from old-vine Savagnin planted on a distinctive terroir of grey marl, limestone scree, and marnes grises overlaid with calcareous scree. The vineyard’s heritage, dating back to 1650 and certified biodynamic since 2014, emphasizes minimal intervention and traditional winemaking. Grapes are vinified using direct pressing and indigenous yeasts in airtight or neutral demi-muids, without fining, filtration, or added sulfur. The wine is aged on its lees for approximately three years (with some expressions undergoing up to four years in old oak barrels), allowing a natural deposit and slight carbonation to develop—factors that often necessitate decanting.
