2020 Ganevat Les Cedres Chardonnay

Les Cèdres is a Chardonnay-based white wine produced from old vines grown on a marl-limestone (marno-calcaires) terroir in the Jura—encompassing areas such as Marnes du Lias and Marnes. Sourced from carefully selected parcels that underscore the authentic character of the Jurassien terroir, the wine is vinified using natural yeasts and traditional techniques. It is aged on its lees in barrels for 2 to 3 years; methods include anaerobic pumping-over and ouillage, with no added SO₂, clarification, or filtration, resulting in naturally occurring sediment. This approach highlights both the specific vineyard origins and the distinctive winemaking style of the region.

Farming

Organic, ecological, and biodynamic viticulture is practiced. Certified biodynamic since 2014, the estate holds Ecocert and Demeter credentials and employs traditional techniques such as manual destemming and avoiding new wood.
 

Harvest

Grapes are hand‐destemmed.
 

Fermentation

Vinification is conducted with indigenous/naturally occurring yeasts under anaerobic conditions (pumping over) and without additives for up to 24 months. The process omits clarification and filtration and avoids the use of new oak. Sulfur is applied only in homeopathic doses when used or has been completely eliminated since 2006.
 

Aging

The wine is aged on lees in barrels for 24 to 36 months—with some vintages employing ouillage—without the inclusion of new oak.
