Valpolicella takes its name from the Latin Vallis-poli-cellae (“Valley‐of‐many‐cellars”), and its classic subzones—such as Negrar—have a long history of vineyards on terraced, limestone-based soils. In the Pigneto cru at just over 300 meters elevation, il Sasso employs a meticulous vineyard management strategy that takes into account the diverse sun exposures of individual vines. Rather than relying on early picking for fresh wines, the approach involves harvesting each row at the optimal moment to manage yields and preserve natural acidity. This technical method supports the production of Amarone della Valpolicella Classico from a blend of Corvina, Corvinone, and Rondinella, reflecting both deep-rooted tradition and modern viticultural precision.
