2020 Il Sasso Valpolicella Classico Superiore
This Valpolicella Classico wine is crafted from Corvina, Corvinone, and Rondinella grapes sourced from east-facing terraced vineyards in Veneto, Italy. Hand-harvested at optimal ripeness, the wine undergoes cofermentation with partial destemming and whole-cluster fermentation using indigenous yeast with minimal sulfur. After complete dryness, the must macerates for a month before soft pressing. Unlike traditional area practices, no passito is added. The wine ages for at least 12 months in cement diamonds without filtration, resulting in a vibrant, medium-bodied expression. Depending on vintage, it may be released as Classico Superiore. Low-intervention winemaking showcases the terroir's natural character.
