2020 Il Sasso Valpolicella Classico Superiore
This Valpolicella Classico is produced in the Veneto region of Italy from a blend of Corvina, Corvinone, and Rondinella. Depending on the vintage, it may be released as Classico Superiore. The grapes, sourced from east‐facing terraces that yield perfectly ripened fruit, are hand‐harvested and cofermented with a blend of varieties. The production process involves partial destemming and whole-cluster fermentation with indigenous yeast and minimal sulphur addition. Once the fermentation reaches dryness, the must undergoes a one‐month maceration period before soft pressing and an aging period of at least 12 months in cement vessels. No passito is added, and no filtration is applied.
