2020 Les Vignes de Paradis Chasselas Un P'tit Coin de Paradis

This 100% Chasselas wine is produced from vines planted in the 1990s on west-facing slopes characterized by glacial moraines, molasse, and yellow clay. The vineyard, part of Les Vignes de Paradis, is managed using organic practices (official conversion) combined with biodynamic methods. In the cellar, the grapes are hand-harvested in 2 to 3 passes, followed by gentle pressing. Fermentation occurs at 16°C in 500-liter demi-muids using indigenous yeasts. The wine is aged for 7 to 9 months with light white earth filtration and no SO₂ is added until bottling. This minimal intervention winemaking approach reflects Dominique Lucas’s journey from Pommard to establishing his domaine in Savoie.
