2020 Tauss Weissburgunder Vom Opok

Tauss is a natural wine producer based in Styria, Austria (Südsteiermark) practicing chemical-free, holistic, natural, and Certified Biodynamic viticulture. Their Weissburgunder Opok, also known as Pinot Blanc, is grown on Opok soils characterized by rocky clay, silt, and chalky marl subsoils. The grapes are hand-harvested, destemmed, and left on the skins overnight before gentle pressing using an open pneumatic press. Alcoholic and spontaneous malolactic fermentations occur naturally in old neutral French barriques and 300L barrels, with the wine aging for approximately 12 months in neutral oak casks and bottled without fining, filtration, or added sulfur. The resulting wine is noted for a green and flinty character with a mineral, smoky, citrus profile, balanced by a saline edge.
