2020 Tenenublo Xerico

Xérico is a red Rioja produced by cofermenting primarily Tempranillo with a minor inclusion of Viura. Its vinification employs controlled maceration followed by maturation in distinct vessels: one expression is aged for 6 months in French oak barrels while another is matured for 5 months in cement and chestnut foudres. These techniques reflect both traditional Rioja practices and modern enological innovations.

Harvest

Grapes are harvested by hand. Fermentation: Partially destemmed grapes undergo spontaneous co-fermentation with indigenous yeasts in open cement tanks with gentle extraction via punch-downs and malolactic fermentation. Aging: The wine is matured in several distinct expressions: one aged for 6 months in French oak barrels, another for 5 months in cement and chestnut foudres, and a third for 12 months in concrete tanks.
