2021 Ampeleia Cabernet Franc
Ampeleia’s Cabernet Franc is produced exclusively from estate vineyards in Tuscany that span distinct terroirs—from the Ampeleia di Sopra parcels planted between 1995 and 2004 at 450–600 meters above sea level to the single‐parcel vineyard known as Vigna all’Asina (also referenced as dell’Asina) at 500 meters above sea level. The vineyards, established on ancient, limestone-rich, and mineral-bearing soils characteristic of the Roccatederighi area—with its warm climate moderated by cool sea breezes—are cultivated biodynamically. The grapes, harvested in early October with typical yields of 30 hl/ha, form the basis of wines produced under the Monovarietali project, which emphasizes single‐variety and single‐vineyard expressions. Winemaking techniques include separate vinification using native yeasts and maturation in neutral vessels (including concrete tanks) designed to preserve the purity of the varietal before final blending. In addition, collaborative efforts with winemakers such as Elisabetta Foradori, Giovanni Podini, and Thomas Widmann further define the wine’s production, which has also been released under appellations such as Toscana IGT (formerly Maremma Toscana IGT).

Grapes, including distinct varieties, are processed individually with native yeasts before blending to express Mediterranean terroir.
Fermentation
Techniques include a partly carbonic process using 20% whole clusters with the remainder destemmed, alongside protocols incorporating 10% whole clusters. Maceration lasts approximately 2 weeks.
Aging
Two aging regimes are observed—one involving 9 months in cement tanks and another with 18 months in concrete tanks followed by 1 year in bottle.
