2021 Chidaine Montlouis Brut Nature

This wine is a traditional method, Brut Nature sparkling Chenin produced in the Montlouis‐sur‐Loire AOP in the Loire region. The Chenin Blanc grapes are cultivated biodynamically on low‐yielding vineyards. Fermentation begins naturally in demi-muids, followed by a second fermentation in bottle, and the wine is aged on its lees for 18 months. With an ABV of 12%, it is produced without dosage, employing established petillant–mousseux techniques that reflect both the vineyard’s unique terroir and time-honored winemaking practices.

Farming

Biodynamic and Organic practices are implemented using No/Low till and regenerative viticulture techniques. Vineyards are managed with herbaceous cover and the use of melliferous plants and nematicides while avoiding chemical phytosanitary products. Estate-owned vineyards range from 30–90 years old.

Estate‐grown, hand‐harvested, and organically cultivated grapes with low yields.
 

Fermentation

Produced by the Traditional Method (Méthode Traditionnelle) using pneumatic pressing and natural fermentation with indigenous yeasts in 600L demi-muids for up to six months; no malolactic fermentation is applied.
 

Aging

Undergoes extended lees contact with aging in demi-muids—including barrel aging in some cases—followed by in-bottle aging “sur lattes” for a minimum of 12 months, with some batches aged in bottle prior to release.
Dosage: Finished with zero dosage (Brut Nature).
