2021 Chidaine Montlouis Brut Nature

A Brut Nature sparkling wine from the Montlouis-sur-Loire appellation in the Loire Valley, made from biodynamically farmed Chenin Blanc. Produced using the traditional method, the wine undergoes natural fermentation in demi-muids, followed by a second fermentation in bottle and 18 months of lees aging. No dosage is added, resulting in a bone-dry profile. The wine is ageworthy and can be cellared medium-term. Low yields from biodynamic viticulture contribute to the wine's concentration and distinct minerality characteristic of the appellation.

Fermentation

Traditional Method (Méthode Traditionnelle) with natural fermentation using indigenous yeasts in 600L demi-muids for up to six months, pneumatic pressing, no malolactic fermentation
 

Aging

Aged on fine lees in 600L demi-muids, then aged on lees in bottle (sur lattes) for a minimum of 12 months before release, Brut Nature dosage (zero dosage), minimal intervention élevage
