2021 Domaine des Boissières Los Amics Marcillac
Marc Fraysse is a young vigneron who took over two hectares of vines planted by his great-grandfather in Aveyron, farming the estate biodynamically. "Los Amics" (Occitan for "friends") is his tribute to those who helped him along the way. This 2021 cuvée is an assemblage of the best parcels across various terroirs including limestone, marl, and red sandstone. Made from 100% Fer Servadou, 93% destemmed and vinified with indigenous yeasts without additions. Aged 12 months in Burgundian pièces and demi-muids with minimal sulfur (1.5 g/hl) before bottling. Production limited to 3,000 bottles. The wine is ageworthy for around fifteen years.

Ambient yeast fermentation with no added SO2 in stainless steel tanks and barrels, maceration lasted 10 to 15 days, short cuvaison, vertical pressing

Parcels vinified and aged separately for 12 months in used 228L and 600L Burgundian barrels and demi-muids (used 5-8 vintages), then racked to stainless steel tank with first and only SO2 addition (1.5 g/hl), no fining, no filtration, minimal sulfur added (8 mg/l free, 15 mg/l total SO2). Cuvée assembled from several terroirs, crafted via blind tasting with different methods of vinification to capture the variety of terroirs. Vinifications performed close to the fruit in an isolated cave converted from a garage.
