2021 Domaine des Boissières Los Amics Marcillac
Los Amics is a 2021 red wine made from 100% Fer Servadou grapes grown in the Marcillac Valley of Aveyron, France. Produced on a biodynamic estate managed by Marc Fraysse—who inherited two hectares originally planted by his great-grandfather—the cuvée is an assemblage of the finest vineyard selections from various terroirs. These include soils composed of calcaires, marnes, and divers grès rouges, which were integrated via a blind tasting process to reflect distinct vineyard expressions and vinification approaches. The grapes are vinified with 93% égrappé and fermented using indigenous yeasts without any additives; the wine is then aged for 12 months in pièces bourguignonnes and demi-muids with a minimal sulfur addition of 1.5 g/hl before bottling. Limited to a production of 3000 bottles, Los Amics stands as a precise expression of its terroir and traditional winemaking methods.

Harvest
HARVEST: Grapes from several terroirs are processed in parcels vinified and aged separately, with initial handling taking place near the fruit in an isolated cave converted from a garage.
Fermentation
FERMENTATION: Predominantly de-stemmed (≈93%) with 7–10% whole cluster inclusion, fermentation is conducted using ambient indigenous yeasts in stainless steel tanks—with some batches fermenting in older Burgundian barrels (used 5–8 vintages). Maceration lasts 10–15 days and is followed by vertical pressing; in select cases, a short cuvaison is employed.
Aging
AGING: Following fermentation, wine is aged for 12 months in used 228 L/600 L barrels or in pieces bourguignonnes and demi-muids. Post-aging, racking to stainless steel tanks is performed with the first and only SO2 addition (1.5 g/hl, yielding 8 mg/l free and 15 mg/l total), and no fining or filtration is applied.
