2021 Domaine Hauvette Alpilles Rosé Petra

A distinctive rosé from Les Baux de Provence crafted from old vines on calcareous, rocky soils. The blend comprises 70% Cinsault, 15% Grenache, and 15% Syrah. Grapes are pressed and fermented spontaneously using indigenous yeasts in biodynamic concrete eggs, where the wine is also raised sur lie. No sulfur is added during production. The wine displays an onion-skin hue and represents a characterful, gastronomic expression of Provence rosé winemaking with notable structure and ageability.
