Trebbiano d'Abruzzo from Italy’s Abruzzo region is produced from hand‐harvested grapes that are often foot‐trod in wooden tubs or concrete vats, ensuring a gentle maceration and preservation of native characteristics. The vineyards, influenced by the region’s proximity to the sea, impart a pronounced minerality and sapid quality to the fruit. Winemaking techniques include spontaneous fermentation with native yeasts in cement or glass-lined cement vessels and an extended aging period—ranging from 18 to 24 months or even two years—without fining or filtration. Traditional and biodynamic practices, as championed by producers like Emidio Pepe since 1964, emphasize respect for terroir and the use of time-honored methods to maintain the grape’s natural structure while enhancing its potential for aging.
