2021 Frenchtown Cotillion Red Wine
A 50/50 blend of Syrah and Grenache sourced from North Yuba’s Renaissance Vineyard. The grapes are 100% destemmed by hand, yielding mostly intact berries that undergo a progressive foot-stomping process—10% each morning and night for five days—instead of traditional punchdowns. The wine is then aged in old French barrels for 12 months and bottled with 18ppm SO2.

Fermentation
Native fermentation occurs in open-top tanks without racking, fining, or filtering, using minimal SO2 during processing with a small addition at bottling only.
Aging
The product is aged in old French barrels for 12 months.
