2021 Gonon St Joseph Blanc "Les Oliviers"

Gonon’s 2021 St. Joseph Blanc “Les Oliviers” is produced in the St.-Joseph appellation from a vineyard situated at the southern end of the village of Tournon. The wine is crafted from Marsanne and Roussanne grapes grown under organic practices on varied terroirs comprising red clay and granite subsoils enriched with clay and scattered pudding stones. In the winery, a deliberate, slow pressing is followed by settling, vinification, and an eleven‐month maturation on lees in new barrels with regular stirring, highlighting the careful application of traditional cellar techniques.

Farming

Organically grown grapes are cultivated using organic farming practices. The Gonon brothers utilize traditional manual techniques, including foot crushing and stem inclusion.

Harvest

Grapes may be processed using traditional foot crushing with stem inclusion, while white grape must undergoes settling and a slow pressing.

Fermentation

Some lots are fermented in fûts, old barriques, or open oak vats—with traditional methods incorporating regular foot punchdowns.
White must is vinified in new barrels with regular stirring during fermentation.

Aging

Maturation occurs on the lees: red variants spend one year in fûts and old barriques, and white must matures on lees in new barrels for eleven months with periodic stirring.
