2021 Karim Vionnet Beaujolais Villages

Entry-level Villages Beaujolais from Karim Vionnet, crafted from organically farmed Gamay sourced from vineyards near his home in Villié Morgon, including fruit from Morgon, Chiroubles, Fleurie, and Regnie. Grapes are hand-harvested and undergo whole cluster, full carbonic maceration for 2-3 weeks with native yeast fermentation. The wine is aged for 6 months in concrete tanks and bottled unfined, unfiltered, with no additional SO2. A classic expression of Gamay with a silky, refined texture and notable stony minerality from granite soils. Serve cool.

Fermentation

Full carbonic maceration for 2-3 weeks; spontaneous fermentation with native yeasts; stainless steel and airtight tanks with natural temperature control to preserve fruit and purity, releasing carbon dioxide only before bottling

6 months in concrete tanks and stainless steel; bottled unfined and unfiltered with minimal added sulfur (10ppm SO2 or less, with some lots receiving no additional SO2)
