2021 Leoncio Pais

Leoncio Pais 2021 is a red wine from Chile’s Itata Valley, produced by Leonidas Fernández (commonly known as Beto Fernández) using ancient, own‐rooted, 150‑year‐old vines. The wine is crafted primarily from the País (Mission) grape with small proportions of Aramon and Cinsault, sourced from multiple parcels in Guarilihue, Batuco, and Magdalena Alto. The vineyards are established on basaltic, red clay soils at approximately 100 m altitude, maintained by longtime, small‑scale growers dedicated to preserving the region’s viticultural heritage. In the winery, the grapes are destemmed and macerated on their skins for 8 days before being pressed with a manually operated vertical press into old Raulí foudres. A low‑intervention approach is employed, using native yeasts, minimal sulfur addition, and bottling without fining or filtering.

An 8‑day skin maceration is carried out during fermentation using native yeasts with minimal intervention.
Aging & Bottling: The must is manually pressed with a vertical press into old Raulí foudres (neutral vessels), then bottled unfined and unfiltered with a small addition of SO2.
