2021 Peter Dipoli Volgar Sauvignon dell'Alto Adige

VOGLAR is the old name for this vineyard area, derived from the Trentino dialectical expression 'fogolar' meaning fireplace or hearth. Originally planted with the local red variety Schiava, the vineyard was entirely replanted with Sauvignon Blanc between 1988 and 1991. Located at 500-600 meters altitude on sandy soils with a strong calcareous skeleton of dolomitic origin, the steep slopes with eastern exposure allow for complete physiological ripening without loss of acidity and varietal aromas. The wine is fermented in large acacia barrels and aged on its lees until May following harvest, with batonnage performed every 10 days during the first three months, then bottled and cellared until January before release. The relatively high elevation produces a complex wine showcasing tropical fruit aromas and minerality with structure suitable for moderate bottle aging.

Fermentation

alcoholic fermentation lasts approximately 10 days in large acacia barrels (19-58 hl capacity) at 22°C; malolactic fermentation is avoided; wine remains on fermentation lees in barrels until May following harvest with batonnage performed every 10 days during the first three months after fermentation
 

Aging

wine is bottled in May and remains in the cellar until January of the following year before release
