2021 Quintarelli Veneto Rosso Primofiore

Primofiore is a red blend produced in the Valpolicella region that combines indigenous varieties—Corvina and Corvinone—with international selections, Cabernet Sauvignon and Cabernet Franc. In some expressions, the blend is apportioned approximately 50% native grapes and 50% Cabernet varieties. Production involves partially drying the Cabernet grapes (often on straw matting) while pressing the Corvina and Corvinone immediately after harvest. Following initial ripening in wooden boxes to enhance grape maturation, the must undergoes fermentation and is subsequently aged in Slavonian oak barrels for periods ranging from one year to several years. This approach reflects a synthesis of traditional Valpolicella techniques with elements drawn from Bordeaux production practices.

Farming

Farming practices emphasize respect for nature and a rigorous approach to grape selection.

Harvest

Cabernet Sauvignon and Cabernet Franc are partially dried—using Amarone‐style drying for about one month or on straw matting—with some batches undergoing extended ripening in wooden boxes, while Corvina and Corvinone are pressed immediately after picking.

Fermentation

The process may incorporate traditional appassimento techniques through partial drying prior to pressing.

Aging

Fermented wine is aged for an extended period in Slavonian oak barrels (including at least one year in large barrels), with additional maturation in bottle or further barrel aging spanning several years.
