2021 Sàgona Gattorosso

Gattorosso is a red wine produced by Cantina Sagòna in the Arezzo area of Tuscany under the Toscana IGT designation. It is crafted from a blend of autochthonous and international black grape varieties, comprising approximately 65% Sangiovese, 25% Malvasia Nera, and 10% a blend of Colorino, Ciliegiolo, and Canaiolo. The grapes are manually harvested and de‐stemmed, and in some cases each varietal is fermented separately in cement tanks with no temperature control over an approximate 21‐day maceration period. Fermentation proceeds naturally without filtration, clarification, fining, or other intervention. Portions of the wine are subsequently aged in steel tanks and barriques, while additional lots undergo a five‐month maturation in concrete and stainless steel tanks before bottling and release the following autumn.

Farming

Vineyards are situated at about 300 metres altitude with south-west exposure on silt and sand soils, employing guyot and upside-down arch systems for vine training. They are managed with a natural, non-interventionist philosophy using minimal copper and sulfur only when necessary, while strictly avoiding chemical pesticides and fertilizers.
 

Harvest

Grapes are manually harvested and de-stemmed.
 

Fermentation

Following a 20–21‑day skin contact/maceration phase without temperature control, spontaneous fermentation with indigenous yeasts occurs—sometimes with each grape fermented separately.
 

Aging

The wine is matured in varied vessels—aged for 5 to 10 months in concrete, cement, or stainless steel tanks, with one portion (50% comprising Sangiovese, Colorino, Canaiolo, and Ciliegiolo) developed in steel, and the remainder (with Malvasia Nera) aged in barriques with 3 to 4 passages.
