2021 Sàgona Gattorosso

Gattorosso is a fresh and fruity red wine from Cantina Sagòna in the Arezzo area of Tuscany, produced under the Toscana IGT designation. The blend consists of Sangiovese (65%), Malvasia Nera (25%), and a mix of Colorino, Ciliegiolo, and Canaiolo (10%). Grapes are manually harvested and mostly de-stemmed, with each variety fermented separately in cement tanks for approximately 21 days without temperature control. The wine is aged for 5 months in a combination of concrete, stainless steel tanks, and barriques, then bottled and released the following autumn after harvest. Unfined, unclarified, and unfiltered.

Farming

The vineyards are managed with a natural, non-interventionist philosophy, employing minimal doses of copper and sulfur only when necessary, while strictly avoiding chemical pesticides and fertilizers. Vineyards are located at about 300 metres altitude with south-west exposure on silt and sand soils, trained using guyot and upside-down arch systems.

Spontaneous fermentation with indigenous yeasts in cement tanks, with each grape variety fermented separately; 20-21 day maceration period without temperature control; no clarifications or filtrations
 

Aging

50% of Sangiovese along with Colorino, Canaiolo, and Ciliegiolo aged in steel, while remaining portion with Malvasia Nera aged in barriques with 3 to 4 passages; maturation for approximately 5 months in concrete and stainless steel tanks; no filtration, clarification, or fining
