2021 Vincent Paris Granit 60
This Cornas wine is produced from older vines cultivated on steep, 60‑degree slopes with granitic soils at approximately 300 m in elevation. The grapes, sourced from vineyard sites including Patou, Mazard, and Sauman (with additional holdings in Crozes‑Hermitage), are managed by pruning vines to just four bunches per vine to concentrate their growing power and reduce the need for green harvesting. Winemaking involves fermenting 30–33% of the must as whole clusters at low temperatures. Approximately two‑thirds of the juice is vinified in oak barrels while the remainder is processed in stainless steel tanks, with the wine then aged for about 12 months in oak.

Approximately 70% of the grapes are destemmed, while a partial whole cluster approach is employed (about 33% whole cluster).
Fermentation
A week-long cold maceration at 12°C precedes a natural, low-temperature fermentation that lasts 3–4 weeks. Vinification is split, with roughly two-thirds occurring in oak barrels and one-third in stainless steel tanks.
Aging
An initial 3-month vat maturation is followed by up to 12 months of barrel aging. Oak barrels are previously used (avoiding new oak), and in some cases, the wine is unfiltered to preserve its expression of terroir.
