Farming

Cultivated without chemical herbicides or synthetic products, only natural green manure with legumes and grasses is used. Vines are trained with a double Guyot system at a density of 5000 plants/ha, and indigenous varieties are maintained through careful, attentive vineyard work that honors the region's long winemaking history.
 

Harvest

Grapes are accurately selected during the coolest hours and destemmed.
 

Fermentation

The partly pressed grapes undergo either a 36‑hour cold pellicular maceration or remain in contact with skins for almost a day in the press before fermentation. Fermentation occurs in stainless steel tanks at 16°C, employing indigenous yeasts along with a pied de cuve.
 

Aging

The clarified must ages on its noble lees in stainless steel for 8 months, with bottling taking place in the spring following the vintage.
