2022 Benjamin Serer Vouvray La Tradition
This sparkling Vouvray is crafted from Chenin Blanc using the méthode traditionnelle (or méthode champenoise) with native, spontaneous fermentations. Production involves raising three‐fourths of the wine in steel tanks over winter and one‐fourth in older 400L barrels. Bottled en tirage in March, the wine is then aged on its lees for 12 months before disgorgement, with minimal cellar intervention to clearly express its terroir.

Fermentation
Native (spontaneous) fermentations are conducted with extended alcoholic fermentation and minimal SO2 added only at bottling; heavy fining and filtration are avoided, and vinification occurs in steel vessels and neutral barrels.
Aging
The product is aged for 12 months on lees and then disgorged with no dosage.
