2022 Didon Les Vignes Blanches Aligote
Domaine Didon operates a biodynamic estate in Chassey Le Camp, Burgundy, producing Bourgogne Aligoté “Les Vignes Blanches” from vines that include 75‐year-old plantings on their 2‐ha site in Bouzeron, complemented by regionally sourced material. The winemaking process begins with slow, direct whole-bunch pressing, followed by fermentation in fiberglass tanks. The wine is aged for 10 months in barrels without stirring the lees, and is subsequently racked and bottled without fining, filtration, or sulfur additions. This methodical approach underscores the estate’s commitment to biodynamic practices and precise production techniques.
