2022 Domaine Agnès Paquet Auxey-Duresses Rouge "Les Hoz"

AOC – Auxey-Duresses – Rouge is a red wine produced from Pinot Noir sourced from the renowned ‘Les Hoz’ vineyard, characterized by its south-facing exposure and deep white limestone soils. The vineyard is composed of two distinct plantings (années 1950 and 2000), with grapes from each era vinified and aged separately to preserve their unique expressions. A significant percentage of whole grape is incorporated during maceration, a technique that, together with the distinctive Auxey terroir and careful separation of fruit from different vine ages, defines the wine’s production profile.

Farming

Cultivated under Agriculture Biologique with organic certification (Ecocert, 2022), the vineyard was planted in two phases (1950 and 2000) with separate vinification for each parcel. No chemical herbicides have been used since 2004, relying on manual work and copper and sulphur-based treatments.
 

Harvest

Grapes from young vines are 60–85% de-stemmed while those from older vines are 100% de-stemmed, with a portion (approximately 25% of the harvest) kept whole.
 

Fermentation

Vinification takes place in concrete/cement tanks over 15–20 days using ambient yeasts and traditional foot punch-downs, incorporating whole-bunch fermentation.
 

Aging

Following fermentation, a 10–12‑month barrel aging period is undertaken—employing either non‑new barrels or using 10–30% new barrels—followed by an additional 2‑month tank (or in‑mass) aging prior to bottling.
