2022 Domaine des Ronces "Creve Coeur" Cotes du Jura
Domaine des Ronces, a certified organic and biodynamic estate in Orbagna within the Côtes du Jura, produces a 100% Savagnin white wine that exemplifies traditional Jura winemaking techniques. The grapes are hand-harvested and undergo natural fermentations using native yeast. The wine is matured for six months in amphorae (with additional use of stainless steel cuves), a method that promotes an oxidative style reminiscent of sherry production by maintaining a thin film of yeast during aging. With an estimated aging potential of three to five years, this wine reflects its terroir-driven character and meticulous production methods.
