2022 Domaine Ganevat Plein Sud Cotes du Jura Trousseau

Domaine Ganevat produces a 100% Trousseau (Bastardo) red wine in the Jura from vineyards established in 1949 and 2000. The grapes are grown on terroirs characterized by stony, gray marl soils—with scree and pebbles originating from the rock of Chalandigna. Cultivation follows biodynamic principles, and vinification is conducted using indigenous yeasts without fining, filtration, or the addition of sulfur; in some cases, decanting is recommended. The production reflects a traditional, limited approach that emphasizes the unique attributes of its specific vineyard sites.

Fermentation

Indigenous/native yeasts initiate fermentation with minimal intervention. For red wines, carbonic maceration is employed. No fining (collage) or filtration is applied; deposits are accepted, with decanting recommended. Practices avoid remontage and pigeage, and sulfur additions are kept to a minimum (or fully eradicated in some cases).
 

Aging

Red wines are aged in neutral barrels or, alternatively, in oak fût for 1 year. White wines and other styles undergo extended lees aging—ranging from a minimum of 2 years up to 11 years—with individualized élevage techniques (including ouillage).
