2022 Dominique Gruhier Crémant de Bourgogne Extra Brut

This Crémant de Bourgogne is produced in the Epineuil region near Champagne and Tonnerre using the traditional method. It is a Champagne blend style sparkling wine made from a 65% Pinot Noir/35% Chardonnay mix, with organic and estate-farmed grapes. Sourced from seven parcels, the vineyard is planted on classic Kimmeridien soils—characterized by Kimmeridgian clay-limestone embedded with oyster fossils—and benefits from a preserved terroir. The 2022 vintage was marked by warm, dry conditions, and the wine is released under the Crémant de Bourgogne appellation as part of Dominique Gruhier’s portfolio.

Farming

Organic and biodynamic viticulture is practiced with some minor synthetic treatments on parts of the domaine. Certified Ecocert (2015) and Organic (AB, 2015), the farming system maintains 9,500 vines per hectare with 3–4 annual tillings supplemented by applications of herbal tea and manure.
 

Harvest

Grapes are pneumatically pressed with press fractions separated for vinification.
 

Fermentation

Ambient yeast fermentation is conducted in stainless steel vats and in 400 and 600L demi-muids, employing Traditional Method techniques that foster fine bubbles and freshness.
 

Aging

Following fermentation, an initial maturation of 8–9 months takes place in stainless steel tanks and/or 600L barrels, followed by 12–36 months of prise de mousse on lees with a 2–6 g/L dosage, with some batches receiving an additional 8 months of bottle aging on lees.
