A Crémant de Bourgogne Extra Brut from Dominique Gruhier, produced from 65% Pinot Noir and 35% Chardonnay grown organically on classic Kimmeridgian clay-limestone soils embedded with oyster fossils. The vineyard is located in the preserved Epineuil area, not far from Champagne, where grapes are sourced from 7 parcels. Made using the traditional method, this sparkling wine offers a fresh, elegant alternative to Champagne, reflecting the distinctive terroir of the Tonnerre and Epineuil regions with its characteristic limestone influence and mineral backbone.

Farming

Organic and biodynamic viticulture with Ecocert certification from 2015 (AB). 9,500 vines per hectare, tilled 3-4 times per year and treated with herbal tea and manure. Minor synthetic treatments applied on parts of the domaine.
 

Harvest

Grapes are pressed pneumatically with press fractions separated for vinification
 

Fermentation

Naturally fermented using ambient yeasts in stainless steel vats and 400L and 600L demi-muids
 

Aging

Aged 8-9 months on lees in stainless steel tanks and barrels, then 12-36 months prise de mousse in bottle with 2-6 g/L dosage
