Emidio Pepe’s Pecorino from the Colli Aprutini IGT in Abruzzo is produced using biodynamic and organic viticultural practices. The grapes are hand‐harvested and processed with minimal intervention—employing traditional methods such as slow pressing, native fermentation without filtration, and in some cases aging in cement—to best preserve the varietal’s authentic expression and the terroir’s influence. The wine is released only when the vintage has reached its optimal development, reflecting a commitment to natural winemaking techniques rooted in a long-established heritage.

Farming

Organic and biodynamic farming techniques are employed, with selective hand-harvesting of grapes. The grapes are cultivated in clayey and calcareous soils at approximately 300 meters above sea level, benefiting from a strong day-to-night temperature range and constant ventilation for optimal ripening.
 

Harvest

Grapes are hand‐harvested, with select lots undergoing traditional foot crushing in wooden vats.
 

Fermentation

Native yeasts drive natural fermentation in varied vessels—temperature-controlled stainless steel vats, glass-lined cement tanks (18–24 months), or vitrified cement tanks—often following a slow press with no maceration; white wines are not decanted before release.
 

Aging

Techniques include bottle aging, prolonged cellar maturation (with a portion retained until optimal release), cement aging, and lees contact, all executed without oak exposure or filtration, and with unfined, unfiltered bottling.
