2022 Guímaro Ribeira Sacra Blanco

Produced in the steep, terraced vineyards of Ribeira Sacra on slate soils at 300–350 m elevation, this wine is crafted exclusively from Godello grapes—many of which come from vines over 50 years old. The grapes are hand‐harvested and fermented in temperature‐controlled stainless steel tanks using native yeasts, with malolactic conversion intentionally blocked. After fermentation, the wine is rested in tank prior to bottling without fining or filtering. The estate, rooted in a tradition dating back to Roman times and recognized as a pioneering member of the Ribeira Sacra appellation since 1996, exemplifies a commitment to both heritage and technical precision in winemaking.

Farming

Hand-harvested grapes from old vines (over 50 years) grown in steep, terraced vineyards and parcels in Amandi at 300–500 m, planted on local Losa slate, granite, and sandy soils.
 

Harvest

Cold maceration with skins applied for a few hours. Fermentation – Fermentation occurred in temperature-controlled stainless steel tanks using native yeasts, with malolactic conversion intentionally blocked. Aging – In select batches, aging included 6 months on lees without barrel use. Final Processing – Bottling was executed without fining or filtering, with light filtration applied in select runs.
