Seventy‐five percent of the must is directly pressed into 225L barriques, while the remaining 25% undergoes 8 days of skin fermentation via spontaneous, natural fermentation without temperature control, with occasional batonnage and light filtration applied.
 

Aging

The wine is aged in a mix of 225L, used barriques, old barrels, and stainless steel vessels, maturing on gross lees for 10 months without additives, fining, or filtration, with barrels blended one day prior to bottling.
