2022 La Roche Bleue La Guinguette
Sébastien Cornille’s 2022 “La Guinguette” is produced in the Loir valley at Domaine de la Roche Bleue from vines over 30 years old in the Coteaux du Loir. The wine is crafted from a blend that is approximately 70% Pineau d’Aunis, with the remainder comprising roughly 20% Gamay and 10% Cabernet Franc. Made using organic/biodynamic practices and traditional winemaking techniques that emphasize the vineyard’s distinct terroir, the wine is intended to be served slightly chilled.

Grapes are hand-harvested selon le calendrier lunaire.
Fermentation
Using whole clusters, destemmed—and in some cases, slightly éraflés—grapes, a semi‑carbonic maceration is carried out for approximately 20 days in cuve. Native yeasts drive the alcoholic fermentation, which is followed by malolactic fermentation; in several batches, these processes occur in 3‑ to 5‑year‑old barrels.
Aging
An 8‑month élevage takes place in 3‑ to 5‑year‑old barrels (or barriques), with varietal protocols such as Pineau d’Aunis and Cabernet Franc aged in vieux fûts and Gamay in cuve.
Bottling: The product is bottled without collage and with partial filtration, with slight sulfitage.
