This 1‐litre red wine is produced by a Triple “A” winery noted for its diverse portfolio and commitment to traditional Pugliese practices. It is crafted using spontaneous fermentation and prolonged maceration with autochthonous yeast strains, followed by an 18‐month maturation period in stainless steel. Farming

Biologico, Biodinamico, and Naturale practices are employed alongside Synergistic Agriculture and ICEA Organic Farming on a 19-hectare vineyard.
 

Harvest

Grapes are destemmed and softly crushed.
 

Fermentation

Spontaneous fermentation is initiated using a pied de cuve of native yeasts. Skin maceration lasts 20–30 days with soft pressing to separate the juice. Natural fining and stabilization are employed without added fining agents or filtration.
 

Aging

The wine undergoes malolactic fermentation during extended lees contact in stainless steel tanks. Battonage is performed frequently, with aging durations reported as 18 to 36 months and very low sulphur dioxide added before bottling.
