2022 Pattes Loup Chablis Vent d'Ange

Domaine Pattes Loup, led by Thomas Pico, is an innovative Chablis estate that has converted its vineyards to organic viticulture with strict yield control. The grapes are hand harvested and subjected to rigorous hand sorting at the winery. Under the label Vent d’Anges—a deliberate play on the word vendange—the wine is produced using indigenous yeast, with up to 40% of the juice fermented in concrete eggs and the remainder in stainless steel, without any oak influence. In certain cases, the wine undergoes extended lees aging (mise tardive) to enhance its structure while preserving its natural acidity and saline characteristics. This production method reflects a transparent winemaking approach that emphasizes the expression of terroir.

Farming

Fermentation

Fermentation is carried out with indigenous (native) yeasts, with roughly 40% in concrete eggs and the remainder in stainless steel. Minimal intervention techniques are employed (no fining or filtration), and some lots undergo oak treatment under Thomas Pico’s production, while others adhere to natural winemaking practices.
 

Aging

Extended élevage of 36–48 months is practiced, with aging on the lees in tanks, concrete eggs, and in bottle to develop texture and complexity.
