2022 Pattes Loup Chablis Vent d'Ange

Domaine Pattes Loup, led by Thomas Pico, is an innovative organic estate in Chablis that emerged from a 2.4-hectare family property. Pico converted to organic viticulture against his father's wishes after learning from natural-wine pioneers Alice and Olivier de Moor. The 'Vent d'Ange' bottling (a homophonic play on 'vendange') is a late harvest expression showcasing strict yield control and hand harvesting with sorting at the winery. Fermented with indigenous yeast, up to 40% in concrete eggs and the remainder in stainless steel with no oak, the wine undergoes longer lees aging contributing to textured density while maintaining the region's characteristic briny minerality and chalk-driven purity.
