2022 Pino Roman Pais Tino

100% País from 150+ year-old, ungrafted bushvines grown on decomposed granitic soils in coastal Chile at 161m elevation. Phylloxera never reached this area, allowing these ancient vines to remain on their own roots. Grapes are hand-harvested from organically farmed vineyards and destemmed before spontaneous fermentation in open tanks without temperature control. The wine rests for 10 months in stainless steel before bottling unfined and unfiltered with minimal added SO2. Open and chill for 20 minutes before serving to allow the wine to fully express itself.
