2022 Pino Roman Pais Tino
100% País wine from Sur, Chile is produced from old, ungrafted vines—including 60+ year‐old own‐rooted vines from a 3-hectare vineyard planted at 161 m above sea level on granitic soils, as well as 150+ year-old bushvines grown on decomposed granite in coastal regions. Grapes are hand-harvested and destemmed before being placed in an open vat for maceration and spontaneous fermentation without temperature control. In one process, the wine rested for 10 months in stainless steel before bottling. The wine is bottled unfined and unfiltered with minimal added SO2, adheres to organic practices, and is produced at 12% ABV.

Fermentation
The must undergoes spontaneous fermentation initiated by indigenous wild yeasts through open vat maceration and in open stainless steel tanks, conducted without temperature control.
Aging
A 10‑month rest is completed in stainless steel vats before bottling unfined and unfiltered. Minimal intervention is maintained with very low sulfur additions (<15ppm) and adherence to vegan practices, yielding a final ABV of 12%.
