2022 Plaisance Penavayre Bouysselet VDF Blanc

Bouysselet is a rare local white variety revived by Château La Colombière from pre-phylloxera vines. Endemic to Villaudric and cultivated on just a few hectares worldwide, its lineage derives from Savagnin (Jura) and Plant de Cauzette (Béarn). The vines are nurtured in clay-limestone soils enriched with rounded gravels and cobbles from alluvial deposits of the Tarn river at 220 m altitude. This 100% Bouysselet cuvée highlights the successful renaissance of a historically forgotten grape through careful attention to vineyard and terroir details.

Farming

Organic (AB, 2011) and Bio practices are employed, incorporating biodynamic techniques, cover crops, and minimal copper treatment using plants and essential oils, with a plantation density of 5,000 vines per ha.
 

Harvest

Grapes are eggraped and de-stemmed before processing.
Pressing: Lowpressure pressing is employed.
 

Fermentation

Fermentation occurs with ambient indigenous yeasts, divided between sandstone amphora and stainless steel vats, followed by malolactic fermentation.
 

Aging

The product is aged for 10 months on the lees in sandstone amphora and 500L barrels.
