Les Lavières is a 1er Cru Savigny-lès-Beaune from Domaine Le Puy de L'Ours, crafted by Jean Orsoni and Juliette Puyperoux who left Paris to pursue winemaking in Beaune. This wine comes from a 1.61-hectare parcel planted in 1968 on clay and limestone soils. The grapes from certified organic vines are entirely de-stemmed and fermented with light daily pump-overs, then aged in neutral barrels for 10 months. The winemaking approach emphasizes an elegant, fresh, and accessible style that expresses the terroir's finesse and depth.
