Farming

Biodynamically farmed (Demeter certified). Vines cultivated in a traditional and selective manner with short pruning. Soil maintenance done mechanically without chemical weeding. Vines protected using preparations made from natural products, in respect of biodiversity. Limited yields between 25 and 30 hectoliters per hectare.

100% whole bunch maceration

Fermentation

Conducted with natural yeast found on the grapes; gentle, infusion-based approach with no pigeage or remontage

Aging

12 months in concrete egg, barrel, and amphorae (some lots aged for at least three years); very little use of SO2 (10 mg/L added during aging and 10 mg/L at bottling, total sulphur 52 mg/L); no filtration or fining
